Coachella 2012

Another year, another great Coachella weekend spent in Indio, CA.  Nothing pairs better than great music, great people, and great outfits, and you’re sure to find them all at Coachella.  While Weekend Two was scorching compared to Weekend One, we were pleasantly surprised with all the great fashion we saw and awesome people we met.  Here are a few snapshots of our favorites of the weekend.

Free People models?  Nope, just some cute festival attendees.  We love each girl’s outfit and how they all compliment each other.  Prints, flowy fabrics, lace, bandeau and crop tops- these girls nailed all the trends of Coachella fashion.

We could not get over how cute this family was.  Baby boys in fedoras; baby girl in a bikini and lace vest- there were not any cuter kids at Coachella than these.  What a great way to expose your children to music and culture!  These parents were so great with their kids, wading them into the dancing crowd to check out the DJs at the Sahara Tent.

Flower headbands were a popular accessory at Coachella 2012.

We loved Brittany’s turban headband!  A great way to keep the hair out of your face in the Indio heat.

Love the neon top paired with the beaded denim shorts.

Bright colors, prints, hats, and smiles were a must for Coachella goers.

After water, the most important necessity at Coachella is comfortable shoes.  The entire day is spent dancing, standing, and walking and you do not want to have uncomfortable shoes hold you back.  We loved seeing what shoes Coachella attendees chose to wear, knowing that comfort and style are key factors in choosing their shoes.

Ahhhh that sunset.  This is the perfect time of day in Indio- time to reflect on all the great memories you created with friends on the grass at each stage and get prepared for the night of headliners.  We will be dreaming of this sunset until next year.  Thanks for the memories Coachella!

Berry Delicious Oven Pancakes

Do you ever dream of being the star of a foodnetwork show, have an amazing home with fresh herbs and vegetables, and a friend who is a florist, and have a favorite café in Paris…and an amazing, sweet husband that eats anything and everything you cook for him? We sure do and this is why we live vicariously through Ina Garten, the Barefoot Contessa. While our friend, Jenna, was flipping through the Barefoot Contessa’s cook book, she stumbled upon the Tri-Berry Oven Pancakes and boy are we happy she chose us to help her make this delicious brunch treat! It is the easiest thing to whip up but it will for sure amaze any guest you have over for breakfast or brunch!

Here’s what you’ll need:

  • 1 cup each raspberries, blueberries, and sliced strawberries
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter, melted, plus 4 teaspoons for the dishes
  • 3 extra-large eggs, at room temperature
  • 1/2 cup milk
  • 1/2 cup all-purpose flour
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon grated orange zest
  • 3/4 teaspoon kosher salt
  • Maple syrup and confectioners’ sugar, for garnish

Preheat the oven to 425 degrees.

Gently combine the berries and sugar in a small bowl and set aside while you make the pancakes. Place 4 (6- to 7-inch) individual gratin dishes on two sheet pans. Place 1 teaspoon of butter in each gratin dish and set aside.

Place the eggs in the bowl of an electric mixer fitted with a whisk attachment and beat on medium speed until mixed. Add the milk and combine. Slowly add the flour, vanilla, orange zest, 2 tablespoons melted butter, and the salt and mix just until smooth. Whisk by hand if the mixture is lumpy.

Place the gratin dishes in the oven for 3 minutes, until the butter is hot and bubbly. Make sure the butter covers the bottom of each dish. Immediately divide the batter equally among the gratin dishes and bake for 12 to 14 minutes, until puffed and lightly browned. Divide the berries among the dishes, drizzle with maple syrup, dust with confectioners’ sugar, and serve hot. **as per the image, we used a glass pie dish and it worked just fine!

We hope you enjoy! After reading the reviews, we found that many people whip this up for dessert and add whipped cream or nutella!

We are so excited to have found yet another great denim fit for the season! We’ve found the Charlie Skinny Capri Jeans by Lucky Brand Jeans to be our new favorite Spring/Summer jean.. It is so comfortable and we’ve already received tons of compliments after only been wearing them a couple times. This jean is low rise, slim fit, and capri cut. The  slight stretch makes them super comfortable to wear. We want this in more denim washes & prints!

These pancakes were pretty darn delicious.  If you are willing to spend some extra time making these, its well worth it.  They have oats and greek yogurt in them!  I wouldn't call these healthy....  but different!  This recipe is from the lovely cookbook, The Newlywed Cookbook by Sarah Copeland.  You can find it here .  Also check out Sarah's amazing blog…
